"Michi-no-eki Aioi" is a tourist facility located in Tsubetsu Town, Hokkaido, functioning as an access point to the Akan Mashu National Park area. It was developed on the site of the former Kitami Aioi Station of the old JNR Aioi Line, which opened in the Taisho era, and the original station building and railway cars are preserved and exhibited within the park. Inside the facility, food and retail functions utilizing local ingredients from Tsubetsu Town are offered. In particular, handmade tofu and the local specialty "Kumayaki" (bear-shaped sweets) have received a certain level of recognition from visitors as products that leverage regional characteristics.

Handmade Tofu at "Michi-no-eki Aioi"

The signature tofu of "Michi-no-eki Aioi" is made by blending Hokkaido-produced soybeans, including those from Tsubetsu Town, and received the Gold Award in the Momen Tofu category at the Hokkaido Regional Competition of the "2025 (9th) National Tofu Fair."

The Company focused on "okara," a by-product generated during this tofu production process. After approximately six months of development, a product containing 30% okara was developed, addressing the limited utilization of this resource.

This product is being developed as a "regionally circular" commercial product, as part of an initiative to effectively utilize regional resources and create new added value.

By blending 30% okara with Hokkaido-produced glutinous rice, a crispy and light texture is achieved. The hardness is adjusted to be easily enjoyed even by the elderly, and the seasoning is subtle yet lingering, bringing out the original flavor of the okara. The packaging features original characters drawn by Aioi-based illustrator Shigenari Onishi, visually conveying the charm of the region.
