Subsequently, Handa worked as the head brewer at Sailor's Grave Brewing from 2022 to 2023. He gained experience in brewing beer that boldly incorporates local ingredients amidst the vast nature of Australia. Continuing their exchange after his return to Japan, the desire to "collaborate in Japan" came to fruition with this release.

Sailor's Grave Brewing is known for its unique beer brewing in Orbost, a small town of about 2,000 people, utilizing local ingredients from the surrounding area (seaweed, sea salt, wild honey, citrus, etc.). In 2025, it was selected as a Local Hero Legend at the Melbourne Food & Wine Festival Awards, earning high acclaim within Australia.

About "Biru Shiso Lemon Gose"
Style: Gose, a sour beer originating from Germany that uses lactic acid bacteria and salt. This beer combines traditional Gose style with citrus and shiso from Japan and Australia, resulting in a fusion of both countries' cultures.
Concept: The same recipe was brewed for both the Japanese and Australian versions. Falò Brewing uses Setouchi lemons, while Sailor's Grave Brewing uses yuzu. Both breweries added red shiso and sea salt, resulting in a harmonious finish with refreshing citrus, floral shiso aroma, and a hint of salt.
