This exquisite dessert is part of the premium 'Extra Super Series' and luxuriously combines two seasonal fruits at their peak.

The rainy season has already ended in Kyushu, Chugoku, and Kinki regions, and summer is officially approaching nationwide. Amid predictions of another scorching summer, 'Patisserie SATSUKI', Hotel New Otani's confectionery boutique, introduces the 'Extra Super Double Shortcake (Mango & Peach)', generously featuring two fresh, seasonal fruits at the height of their season.

The 'Super Shortcake', launched to commemorate our 40th anniversary, evolved into the 'Extra Super Series', the top tier of the 'Super Series', for our 50th anniversary. These desserts, crafted with luxurious seasonal ingredients, have earned high praise from countless guests as signature sweets representing Hotel New Otani.

This summer, we introduce the limited-time 'Extra Super Double Shortcake (Mango & Peach)', generously featuring domestically grown mangoes, celebrated for their rich aroma and melt-in-the-mouth sweetness, and 'Itohsho', a premium, juicy brand peach from Yamanashi Prefecture now in season. This special creation allows you to enjoy two popular 'Extra Super Shortcakes', previously sold individually, in a single cake. A luxurious flavor experience made possible only during this brief season when both fruits' seasons overlap.

Meticulously Selected Ingredients to Enhance the Charm of Mango and Peach

Domestically grown mangoes, often called "fruits of the sun," are prized for their rich fragrance, abundant juice, and melt-in-the-mouth texture. Paired with them is 'Itohsho (Ittoushou)', a brand peach from Yamanashi, Japan's renowned peach-producing region. Carefully selected based on strict criteria for color, shape, and sugar content, this rare peach offers a deep sweetness and elegant aroma. We further incorporate a delicate layer of juicy lychee, enhancing the fruits' natural sweetness while adding a refreshing aftertaste. Topped with elderflower kuzu, which carries a sweet, graceful fragrance, the cake is a harmonious masterpiece where the distinct personalities of mango and peach beautifully blend. Savor this luxurious flavor, crafted only for this summer, from the harmony of seasonal fruits.

For the sponge cake, we use 'genmai tamago' (brown rice eggs) from chickens raised on pesticide-free brown rice to maximally enhance the fruits' appeal. This creates a moist texture reminiscent of high-end castella cake and a light, fluffy bite. The addition of vanilla further enriches the aroma and adds a deep, complex flavor. The whipped cream is made from fresh cream produced in Omuta, Fukuoka, Kyushu, blended with traditional Japanese wasanbon sugar, resulting in a smooth, melt-in-the-mouth texture. The moment it touches your tongue, the rich aroma of Japanese mango, the deep sweetness of 'Itohsho', the fine-textured sponge, and the silky cream harmonize perfectly, delivering a blissful taste experience. Tradition Passed to the Next Generation

At Hotel New Otani (Tokyo), Yudai Moriyama, who has long honed his skills within the hotel, has assumed the role of the 7th-generation Executive Pastry Chef. Building on the traditional techniques inherited from the 5th-generation Chef Pastry Chef Shinsuke Nakajima and the 6th-generation Chef Pastry Chef Kaoru Suzuki, he continues to evolve with new sensibilities.
