Hotel New Otani (Tokyo)'s Western cuisine restaurant "Bella Vista" will celebrate its 1st renewal anniversary on June 1, 2026. As an anniversary project, they will offer the "1st Anniversary Appreciation Course," where guests can fully enjoy their signature "Jomon Grill." Experience dishes created by the two flames of charcoal and wood, characterized by powerful grilling, along with sommelier-selected wines and a superb view from the top floor.

Chef Shintaro Saito created this course for the special 1st-anniversary season, allowing guests to fully savor the "Jomon Grill," a symbol of Western cuisine "Bella Vista." Normally, when serving "Jomon Grill," only salt and pepper are added to allow direct appreciation of the ingredients' natural taste. However, for this course, a special flavor is created by accompanying domestic beef fillet with "Tomato Condiment" blended by the chef.

After honing his skills at various restaurants within the hotel, including "Tour d'Argent Tokyo," the only branch of the 400-year-old Parisian culinary institution "Tour d'Argent," he assumed the position of Chef of Western Cuisine "Bella Vista" in 2025. His refined and delicate dishes continue to captivate visitors.

Located on the top floor of Hotel New Otani (Tokyo), "Bella Vista" Western Cuisine, with its captivating view from 144m above ground, has been a "gastronomic hub" pursuing culinary excellence since the hotel's opening in 1964. On June 1, 2025, it evolved into a concept for enjoying grilled dishes combining charcoal and wood fire with renowned wines, and is now approaching its 1st anniversary.
