Former owner chef of the French restaurant "Chef Matsuo." In 1980, he opened "Chef Matsuo," a standalone restaurant in Shoto, Shibuya-ku, Tokyo. The first products released are two types of pasta sauces, Chef Matsuo's specialties: "Bolognese Sauce" and "Mushroom Cream Sauce."

The most distinctive feature of Matsuo's "Bolognese Sauce" is that it deliberately does not use minced meat. Large cuts of Australian beef round are roasted in an oven until fragrant, then slowly simmered with red wine and aromatic vegetables. By carefully breaking down the fibers of the roasted beef and blending them into the sauce, it achieves a satisfying texture where you can clearly feel the presence of the meat, yet it is integrated with the sauce, providing a rich meaty experience.

French mushrooms are meticulously simmered with onions and garlic to bring out their natural umami and aroma. This is then unified with a béchamel sauce made with cream from Hokkaido.
