While many standard soft serves use dairy products, emulsifiers, and stabilizers, this product achieves a smooth texture based on coconut milk. Its simple ingredient composition is a key feature. A Product Born from Repeated Trials

Since its founding in 2004, CocoWelle has been conveying the appeal of Philippine coconuts as Japan's first coconut specialty store. Through products such as coconut oil, coconut milk, and coconut sugar, we pursue the deliciousness and potential of coconuts.

The inspiration for this development came from a casual remark by a staff member: "Coconut milk soft serve must be absolutely delicious!!"

This challenge, sparked by that comment, led to development at our in-house "CocoWelle Lab." The CocoWelle Lab has a track record of producing the plant-based ice cream "Coco Ice" using coconut milk.

While leveraging that expertise, achieving ideal smoothness and melt-in-your-mouth texture with only coconut milk proved challenging during development. After approximately 5 years from the initial concept, through meticulous adjustments to temperature, formulation, and air incorporation, we finally arrived at a satisfactory quality.

An Original Rice Flour Waffle with Attention to Texture We also paid close attention to the waffle served with the soft serve. We use an original waffle made from a rice flour sablé dough, pressed and baked with coconut oil and coconut sugar.
