Interview with Mitsuaki Ishioka

(1) Why did you become interested in gluten-degrading lactic acid bacteria?

First and foremost, my deep love for bread is the fundamental reason. On the other hand, in my daily practice, I have realized that many people suffer from their daily eating habits and a lack of regularity. In many cases, general approaches do not lead to sufficient relief, and it was during my search for new approaches that I learned about these gluten-degrading lactic acid bacteria.
