As this year's Doyo no Ushi no Hi falls on a weekend, it is perfect for 'takeout' to be enjoyed slowly at home with family and loved ones.

For the rice in our bento boxes, we use 'Shinshu Yaebara Rice,' which is delicious even when cold.

Of course, it can also be heated in a microwave, allowing you to enjoy the authentic taste as if it were freshly prepared.

About 'Unagi no Mansuke'

Making eel a more accessible delicacy.

Our goal is to offer 'domestic raw eel x Kansai-style grilled' at everyday prices. In the gourmet town of Kagurazaka, we established 'Unagi no Mansuke' with the desire to let people feel 'truly delicious eel more intimately.'

While many eel restaurants currently use imported frozen products or the Kanto-style 'steaming' method, our store focuses on three points: 'domestic, raw, and Kansai-style grilled.'

Mansuke pursues the following five aspects:

1. Eel

Our restaurant uses only domestic eel that can be enjoyed with peace of mind. Through a trusted relationship with a long-established eel wholesaler in Senju, we procure fresh eel every morning and carefully grill each eel individually to order, selected by our discerning eye.

2. Tare (Sauce)

Our tare is a special blend finished to enhance the umami of the eel. With a less sweet, refreshing taste, it complements the savory aroma of the grilling.

3. Grilling

We employ the 'Kansai-style' method of grilling at high temperatures without steaming. This is supported by our patented 'unique grilling technique (Patent No. 7208716),' developed through several years of research and development. Using high heat exceeding 1000°C and far-infrared rays, we perfectly replicate the heat characteristics of binchotan charcoal. By grilling at high temperatures all at once, we succeed in creating a kabayaki where the eel's natural fat and umami are sealed in, the skin is surprisingly crispy and fragrant, and the flesh is plump.

4. Rice

We use Yaebara rice directly from Sasaya Farm, grown with the pure spring water of Mt. Tateshina and organic compost. The grains are well-defined and firmly hold the umami of the eel and the tare.

5. Sansho (Japanese Pepper)

We provide Yamatsuji Ta's stone-ground sansho powder in small bags to preserve its aroma. Enjoy the rich flavor and vibrant color unique to stone-ground sansho. In the restaurant, we also offer freshly ground Wakayama prefecture budo sansho.
