About the Original "Awakei" Hakata Ikkousha

Hakata Ikkousha was founded in 2004 in Daimyo, Chuo Ward, Fukuoka City, Fukuoka Prefecture. It is a tonkotsu ramen brand born from the founder Kosuke Yoshimura's desire to "pursue authentic tonkotsu ramen that is nowhere else and belongs to nowhere."

The taste is supported by its unique "soy sauce tare" and "tonkotsu soup," as well as "Kenshi's custom noodles" developed to complement the soup. The kaeshi (soy sauce tare), which determines the ramen's flavor, is a secret blend of several types of local soy sauces and seafood umami. The tonkotsu soup is simmered until the pork skull, spine, and bones are broken down, and finished using a unique "aged re-boiling method" that involves continuously adding "young soup" to "mature soup." This method concentrates the umami, creating a creamy texture and fine foam. The foam floating on the soup's surface is proof of its umami and is the most distinctive feature symbolizing Hakata Ikkousha, known as "Awakei Tonkotsu Ramen." For the noodles, wheat flour specially formulated to match the foamy, creamy tonkotsu soup is used. "Thin flat noodles" are adopted, which have a chewy texture while utilizing the natural aroma of the wheat. Furthermore, it is finished as a visually appealing bowl with large slices of pork shoulder loin chashu, which has an excellent balance of fat and lean meat, green onions for color, and kikurage (wood ear mushrooms) for textural accent.
