"Tamotsu" is a new brand created to make 100% buckwheat noodles, where you can purely enjoy the original aroma and taste of buckwheat flour, more accessible and enjoyable.

Through its unique "roughly cut style," it offers a new way to enjoy 100% buckwheat noodles, allowing you to savor the pleasant smoothness of thin noodles and the rich chewiness of medium-thick noodles in a single bowl.

This project was initiated from the desire of our management strategy advisor, Takafumi Horie, to "create a truly delicious soba restaurant." Furthermore, Shusaku Toba (hereinafter referred to as Chef Toba), owner chef of the restaurant "sio," who has previously collaborated with our company on product and brand development, has participated. Chef Toba's supervised "Chicken Seiro" will also be available as one of the signature dishes.

From Wednesday, July 1 to Friday, July 17, the restaurant will operate during a soft opening period. On the grand opening day, Saturday, July 18, as an opening campaign, the first 50 customers will receive either "Shinme Mori Soba" or "Chicken Seiro supervised by Chef Toba" for free.

While 100% buckwheat noodles allow you to enjoy the rich aroma and taste of buckwheat, they are often perceived as something to be savored slowly at specialty stores or as being a bit high-class.

At "Tamotsu," while cherishing its authentic taste, we aim to be a 100% buckwheat noodle restaurant that you can visit in various everyday situations, such as during a shopping break, after work, or for a family meal.

This project was initiated from the desire of our management strategy advisor, Takafumi Horie, to "create a truly delicious soba restaurant." Based on the concept of Horie, known as an avid soba lover, we have spent over a year searching for the ideal location and pursuing uncompromising product development.

Chef Shusaku Toba, who resonated with this vision, has now joined us. Our company and Chef Toba have previously collaborated on multiple product developments and new brand developments.

In 2025, we commercialized "sio Milk French" and "Toba Curry Bread" supervised by Chef Toba for our bakery brand "Komugi no Dorei." Furthermore, we have repeatedly undertaken initiatives to deliver "everyday food" from a new perspective, such as launching the new brand "Dashi to Monja" through joint development with Chef Toba.

At "Tamotsu," we will develop a new 100% buckwheat noodle brand that is authentic yet easy to incorporate into daily life, by combining Horie's concept, Chef Toba's sensibility, and our company's accumulated expertise in food brand development.
