**Appetizer: Otaru Uni x Farm-Direct Vegetables**

'Green asparagus from Akai River Koropokkuru Village,' 'Sweet corn from Namara Tokachino Memuro,' 'Kale and herbs from Musou Farm' – the chef personally visits producers to source carefully selected fresh vegetables directly from various parts of Hokkaido.

We also prepare appetizers that evoke the taste of Hokkaido's summer, using mountain delicacies such as 'Furano melon,' which also comes into season in summer.

**Main Dish: Otaru Uni and Flounder Bon Femme**

Finished with a rich sauce made by blending the rich egg yolk of free-range fertilized eggs from Akai River Koropokkuru Village with Otaru uni.

This is this season's signature dish, featuring local fish topped with sea urchin, seared together with the sauce.

With the accent of perilla oil, farm vegetables, and seared sea urchin combined with the sauce, this dish allows you to experience the charm and deliciousness of sea urchin in a single plate.

Otaru Geihinkan, where Restaurant ao is located, is a secluded hotel with 6 ocean-view rooms situated between Otaru and Yoichi.
