Single Malt New Pot 120ml

In the new pot, our decisions and philosophy throughout all processes, from raw material selection to mashing, fermentation, and distillation, are imprinted as they are.

For raw materials, we use 100% flavorful British malt produced by traditional floor malting. Furthermore, we use underground spring water from Mt. Asahidake, a pride of Higashikawa Town, for all processes from mashing to dilution.

To maximize the inherent qualities of the ingredients, we employ a mash filter, which is rarely introduced globally. This extracts all components of the malt without waste, creating a rich and mellow wort. This wort is then carefully fermented for a total of 168 hours in stainless steel and wooden tanks, imbuing the new pot with a rich, grape-like aroma.

Tasting Notes

Aroma
A rich malt aroma rises powerfully, with layers of savory notes reminiscent of toasted bread and cheese crackers. A soft mineral sensation is accompanied by a gentle sweetness of flower nectar.

Taste
It has a fresh and lively mouthfeel, with a refreshing fruit sweetness tightened by a hint of acidity. At the core of the taste, the presence of malt is firm, and a creamy flavor reminiscent of milk ice cream gently envelops the whole. The texture is oily and thick, with a subtle hint of seaweed adding depth.

Finish
It lingers long with a gentle warmth, spreading flavors reminiscent of hot wine, dried plums, and cloves. Furthermore, a delicate mineral sensation quietly remains until the end of the finish, giving structure and complexity to the taste.

The Private Cask Program is a special experience where you can own unaged whisky in units of one cask, watch its maturation changes, and receive it as your own personalized bottle in the future.

You can choose your preferred cask from four types filled with unaged whisky made from non-peated malt (malt without smokiness) from Scotland.

Mizunara Cask 220L Hogshead (¥4,250,000 excluding tax / includes 8 years of storage fee)
A Japanese cask made from Mizunara oak from Toyama Prefecture, over 200 years old. An elegant Japanese aroma reminiscent of agarwood and sandalwood is nurtured during long maturation.

18-year Sherry Cask 220L Hogshead (¥2,250,000 excluding tax / includes 3 years of storage fee)
A Spanish oak cask, matured with Oloroso or Pedro Ximénez sherry for 18 years. It creates a rich and complex flavor with layers of dried fruits, nuts, and gentle spices.

Bourbon Cask 200L American Standard Barrel (¥1,380,000 excluding tax / includes 3 years of storage fee)
Sweet aromas like vanilla and caramel melt out, resulting in a mellow and well-balanced classic taste. It is an approachable option for those acquiring a cask for the first time.

Sherry Octave Cask 55L (¥448,000 excluding tax / includes 3 years of storage fee)
A small Spanish sherry cask. It extracts dense and concentrated flavors in a short period. Its compact volume is ideal for gifts and commemorative bottles.

Whisky crafted by a Chief Distiller with experience in Scotland

Chief Distiller Dar Wei Shay

Leading the whisky production at Tankyu Distillery is Dar Wei Shay (hereinafter David), originally from Taiwan. He honed his skills as a distillation engineer at Edradour Distillery in the Scottish Highlands, acquiring traditional Scotch whisky manufacturing techniques. Subsequently, he served as a Master Blender at Speyside Distillery. With the experience and knowledge he has cultivated, he is now taking on the challenge of new whisky making in Hokkaido.

In parallel with manufacturing operations, David also hosts a whisky podcast that has many listeners, especially in Taiwan.
