The starting point for product development was the "Onigiri 1 Grand Prix," an in-school event held for three consecutive years as part of Kyoto Municipal Kaiken High School's exploratory learning "Kaiken Onigiri Project." Suishoan (Sansai Foods) participated as a judge in this project and, although not winning the grand prize, approached teams with brilliant ideas, starting product development with three teams in fiscal year 2025.

For commercialization, recipes were refined while sharing challenges from the perspective of rice cooking professionals. Students worked hand-in-hand with professionals, from reproducing package design proposals to planning product names and introductory texts.

After gaining experience through initial sales at the "Chushin Business Fair" in autumn 2025 and other events, the students themselves presented their sales plan to the person in charge at Daimaru Kyoto Store, realizing this official appearance.

The Kaiken High School 3rd-year project is scheduled to conclude its sales activities in September 2026, but subsequent grades will take over the commercialization and sales activities through a similar process. Suishoan will continue to accompany them, developing the "student ideas x rice cooking professionals" model, which started in Kyoto, into a continuous industry-academia collaboration model.
