Motivated by "calissons," a regional confection popular in and around Vallauris in the South of France, this dessert is finished with accents of herbs and citrus to evoke the afterglow of creativity. It features a base of fragrant almond joconde sponge, layered with nougat mousse studded with concentrated dried fruits, and topped with apricot compote in white wine infused with rosemary and pink pepper. The entire piece is wrapped in a refreshing, tart lemon mousse, with the surface treated like a canvas and carefully decorated one by one with apricot, red currants, and cassis.
