Inspired by "Calisson," a local confectionery popular around Vallauris in Southern France, these mignardises are finished with a flavor that evokes the afterglow of creation, accented by the fragrance of herbs and citrus. A savory almond joconde base is topped with nougat mousse studded with concentrated dried fruits, and then apricots stewed in white wine compote, flavored with rosemary and pink pepper. The entire treat is enveloped in a refreshing lemon mousse, and the surface is imagined as a canvas, meticulously colored one by one with apricots, red currants, and cassis.
