Audem Inc. (Fukui City) has been operating the consortium "ALL FUKUI" since April 2022 with four companies from Fukui Prefecture.
ALL FUKUI is now launching "Night Cultive291," a night-only dining bar, by expanding the evening hours of "Cultive291," a cafe within the food and business exchange hub "Fukui Minami-Aoyama 291" that they jointly operate. The cuisine will be handled by chefs Christian Ueno and Yoko Ueno, who are based in New York. Focusing on pairing Fukui's ingredients and terroir with alcoholic beverages, they will re-edit and present the charms of Fukui to the urban night.
The concept is "Fukui's terroir, at night." The message conveyed through the cuisine is ── "a love letter to Fukui from New York."
Following a pre-opening from July 3 (Fri) to 5 (Sun), 2026, the grand opening will be on July 10 (Fri), 2026. Fukui will illuminate the nights of Minami-Aoyama five days a week, from Thursday to Monday.

The cuisine is a love letter to Fukui from New York.
"Cultive291," which has been popular as a cafe where visitors can enjoy Fukui's brand rice "Ihohomare" and other offerings during the day, will extend its operations into the evening, providing a relaxed adult atmosphere centered around drinks and food.
"Night Cultive291" values the terroir and stories behind the cuisine of Fukui. The bounty of the sea, mountains, and countryside, along with the land that nurtures them (terroir), will be carefully reflected in each dish.
This culinary expression is entrusted to chefs Christian Ueno and Yoko Ueno, who have built their careers at the forefront of New York's food scene and lead the Japanese food and lifestyle brand "ATELIER KU-KI." Their sensibility, honed in global cities, combined with their Japanese perspective on "farm-to-table," will create new dishes by encountering Fukui's ingredients.
An expression born from the land of Fukui, neither Japanese nor Western, to be enjoyed with drinks. It is a love letter in the form of cuisine, addressed to Fukui from afar in New York.
Chef Profiles
Chefs Christian and Yoko Ueno, who lead "ATELIER KU-KI," a Japanese food and lifestyle brand based in New York, will be in charge of the cuisine at "Night Cultive291." They offer seasonal desserts, farm-to-table bento boxes, and indigo denim products under the concept of "farm-to-table," and have welcomed clients from the art and fashion worlds, including Calvin Klein, British Vogue, and Sotheby's.
Christian Ueno (Chef Kristiaan Ueno)
Originally from California, he is a former executive chef in New York City. He honed his skills at renowned NY establishments such as "Cafe Boulud," "Via Carota," and "Buvette." After coming to Japan, he served as Executive Chef at "Decanter" at the American Club in Tokyo. In NY, he oversaw Tao Group's "Lavo" as Executive Chef and a joint project "Meyers USA" with Claus Meyer, known for Noma. He is also a former fashion designer (graduate of Rhode Island School of Design) and has been featured in numerous publications including "GQ," "dancyu," and "Frau."
Yoko Ueno (Chef Yoko Ueno)
Moved from Tokyo to New York in 2001. Starting at the NYTimes two-star "The Jefferson," she excelled as a pastry chef and garde manger at renowned restaurants such as "Gusto," "Morandi," "Buvette," and "French Louie." She also served as a private chef for restaurateur Keith McNally and composer Jonathan Sheffer, and catered for celebrity events. She specializes in Italian-based baking and dessert expressions that reflect the seasons.
