You can enjoy tasting and comparing the unique characteristics of each, such as the smooth texture and concentrated umami born from aging, the elegant sweetness, and the fragrant aroma from straw roasting.

The sauces that accompany the dishes are chimichurri, balsamic vinegar sauce, salsa criolla, and wasabi. The refreshing acidity, delicate spiciness, and deep, mellow nuances further enhance the individuality of the meat, drawing out a different expression with every bite.
