Since 2018, I have been hosting "Ai no Happo Dashi Lessons" at home, and last February, my six-year dream of commercializing Happo Dashi finally came true. Happo Dashi is a handmade, additive-free broth made with five carefully selected ingredients from across the country, inheriting the secret recipe of Mama Etsuko, the proprietress of a restaurant in Susukino, Sapporo. "Happo Dashi ~Ai no Happo Dashi~"

The concept behind the birth of Happo Dashi is "Eight Treasures."

Born in Kanagawa Prefecture, I moved to Sapporo, Hokkaido, with my two-month-old daughter in 2016 due to my husband's transfer. While thinking about healthy eating to provide safe nutrition for my daughter during my first experience with childcare, I met Etsuko Kiyohara (nicknamed Mama Etsuko) (the woman in the center of the photo), the proprietress of a restaurant in Susukino, Sapporo, and she taught me her special Happo Dashi.

Impressed by its natural and safe deliciousness, I learned the manufacturing method.

After that, I moved to Zushi City, Kanagawa Prefecture, in 2018 and started hosting "Ai no Happo Dashi Lessons" at home. With the support of many participants, I was able to commercialize the product in February 2025. Since its launch, I have been selling it through our own online shop, organic shops mainly in Zushi and Hayama, and by participating in local markets.

My Thoughts

I learned the importance of "food" during my fertility treatment period.

"To eat is to live; to live is to eat."

At that time, my cooking teacher, who taught me everything from how to hold a knife, shared these important words with me.

After conceiving my daughter, our life began in Sapporo, a new place for us.

When I seriously considered food safety for the first time while raising my child, I met Mama Etsuko and learned about Happo Dashi. In a place where I knew no one, the time we spent making Happo Dashi together and chatting was my emotional support.

In 2018, I moved to Zushi to care for my parents and began a life of double caregiving for my parents and child. Both caregiving and childcare were new to me, and when I was desperately trying to survive each day, this Happo Dashi helped me create our daily meals. With this one bottle, cooking became easy, the flavors were perfect, and it was delicious. It was enjoyed by people of all ages. For me, who wasn't good at cooking, this Happo Dashi was my strongest ally.

In modern times, with the nuclear family system progressing and more dual-income households, parents, especially those raising children, are incredibly busy, often down to the second. Despite this, they want to provide nutritious and delicious meals for their children and families. They are struggling to bridge the gap between their desires and the reality of their lives. Just as I was saved emotionally and nutritionally by this Happo Dashi, I want to help other mothers in similar situations, which is why I have been hosting home lessons. I feel the joy of helping to brighten the dining tables not only for my own family but also for the families of the members who attended my lessons. After six years, the commercialization of the product was realized last February.

Normally, it is called "Happo Dashi," but this product is named "Happo Dashi" using the character for "treasure" (宝) because of the story of its creation from eight treasures.

Products that are versatile seasonings with absolutely no additives are few and far between, and they are highly appreciated. The flavor, which maximizes the potential of the original ingredients, is rich in aroma. It is also used in making baby food and meals for young children.
